Q: Diabetic White Frosting for Wedding Cake?
looking for GOOD recipes, and I have a grudge against artificial sweetners

A: Which artificial sweeteners do you have a grudge against?

I dislike the after taste of Sweet-n-Low… but they make a white frosting mix sold in grocery stores…

I also hate Equal (It breaks down into Acetone, formaldehyde and sucrose around 80* or 90*F) and Sugar Twin… Splenda doesn’t give me the volume and weight that I seek… but I LOVE Diabetisweet – now found in Super WalMart Pharmacy Diabetic Sections. It is granulated like sugar – tastes like sugar and has the weight of sugar. It does not break down at baking temperatures. I LOVE it! It costs a mint, but has ZERO glycemic response! No after taste… sweet as the day is long… Luv, luv, luv.

If you don’t mind SOME sugar in with your substitute in a frosting… here’s a fluffy white recipe:

INGREDIENTS:
2 egg whites
1 1/2 cups Diabetisweet sugar substitute
1/8 teaspoon salt
1/3 cup water
2 teaspoons light corn syrup
1 teaspoon vanilla extract
PREPARATION:
Combine all ingredients except vanilla in the top of a double boiler over boiling water. Beat with electric mixer for about 7 minutes, or until mixture will stand in stiff peaks. Beat in 1 teaspoon vanilla extract.

Good luck, hon.
Peace.

Q: Does anyone have a recipie for a white cake suitable for a wedding?
I would like a recipie for a wedding cake. I went to an american wedding once and they had the most awesome white cake with white frosting. I would appreciate a recipie if one could be found. Including the frosting. Thanks!
Wow, thank you all soooo much. I wish I could give everyone a best answer!

A: Easy Vanilla Cake

560 grams butter and shortening ( 280g butter,280 grams shortening, crisco is fine)

1200 grams Sugar

1200 grams flour
56 grams baking powder
2 tea spoons salt

720 grams whole milk
420 egg yolks
2 table spoons vanilla

Pre heat oven to 350. In a mixing bowl, place butter/shortening and sugar, mix with a paddel until creamed ( light and fluffy). ONce the butter mixture is done, add all the other ingredients and mix well until most of the grains of sugar had dissolved ( the mix should not look grainy).

This mix will make a varity of cake sizes.

Butter Cream.
2 lbs egg whites
4 lbs sugar

2 – 2.5 lbs of butter.

Mix together egg white and sugar in a bowl that is heat safe. Place the bowl with sugar and eggs over a pot of steaming water. Stir ever once and a while until the sugar has dissolved (10-15 mins). When the sugar had dissolved the mix should be very hot, pour the mix into and electric mixing bowl and using a whisk, whip until fluffy. When fluffy and cool slowly add you butter (2 lbs), still whisking. The butter cream will look as if it has cracked (separated) but do not worry keep whisking it and it will come together. ( the other half lb of butter might need to be added depending how dry your butter is, if after whisking for a few minutes and it does not come together add some of rhe remaing butter until nice and fluffy.)

This recipe works, wee use it to produce over 25 wedding cakes a week. any other questions please ask.

i will use super moist chocolate cake and its three layer…if its possible to use white fluffy icing or 7 minute frosting , can u give me the exact recipe n procedure? i like this icing cuz its not too sweet…pls help

A: I tried it once and it was to hard to get every batch of 7 minute frosting to turn out the same.I had to throw a couple batches out as the water had touched the bottom of the pan and it got crystalized.I added flowers after the frosting set up a while on the cake.It was fun piping the decorated swirls on the edges and sides.
But it sure did look nice.
Good Luck on whatever you decide.

Q: Question About Making Frosting For My Wedding Cake?
my mom and i are making my wedding cake together, we are not having it done professionally but my mom has been decorating cakes since i was little…anyway we are trying to figure out how to give the white frosting a shimmer of silver in it WITHOUT airbrushing the entire cake, something we can put in the frosting or some kind of frosting recipe that will work for decorating but has a silver shimmer to it. any ideas?

A: Luster Dust would be my choice. Check with a local baking supply store in your area.

http://www.shopbakersnook.com/82.html

Luster dust is an edible food decorating powder which sparkles once it dries. It is commonly applied to the frostings of cakes and cookies, especially for formal events or during the holiday season, when many people enjoy rich gold and silver accents on their baked goods. A bakery supplier in your area probably stocks luster dust, and you can also order it through mail-order companies which specialize in baking products.

Although gold and silver are both common, luster dust comes in a range of colors, from bold primaries to jewel tones. It can be used to create highlighted accents on a finished piece, or it can be applied in larger volume to give a baked good a glossy finish. The product may also be called sparkle dust, pearl dust, or sparkle powder, and it is perfectly safe to eat, just like the gold and silver leaf which are applied to fancy cakes.

A container of luster dust is typically rather small, because a little bit goes a long way. To use it, you will need to dissolve the dust in an extract which contains alcohol such as vanilla or orange extract, or an alcohol like vodka; by using an alcohol solution, you ensure that the moisture will evaporate after the luster dust has been applied. Mixing luster dust with water or other liquids is not recommended, as it can turn sticky and dull.

Once the luster dust is mixed, it can be applied with a small brush. Cake decorators typically frost a cake with a matte white frosting and then apply luster dust over the white; the frosting will glow through the luster dust, making the cake sparkle in good lighting. There are lots of ways to apply luster dust, from a gentle brushing of a whole cake to give it a rich glow to a streak on a holiday cookie for some pizazz.

Many companies sell packages with a rainbow of luster dust colors. Colors can be blended for subtle shading, or mixed individually and painted on to create shimmering images. It can also be used in an airbrush decorating tool, or you can dip fondant flowers in luster dust to turn them into sparkling decorations. Luster dust can also be used to highlight leaves, flower petals, and other sculpted decorations on a cake, although this requires a fine brush and a steady hand.

My sister is getting married soon and she has a strawberry theme. She found a picture of a round three tier wedding cake with white frosting or fondant and red and green strawberry blossoms. It wasnt that cute but she fell in love with it. Her friend that was going to make it fell through so she had a change it to something simple.

I would love to surprise her with that cake but I cannot for the life of me find a picture of it. Does anyone know where I can find it?:

It would mean the world to me if you could help me.
Thanks so much

Q: tight wedding need simple recipe for 3 tier wedding cake?
hi on tight budget so making my own wedding cake im looking for a simple cake recipe for a 3 tier wedding cake white and a good cool whip frosting thanks so much!

A: When I got married we had a friend to make out cake. She just used a generic white cake mix from Sav-A-Lot grocery store and it was SO GOOD!!! When I make a cake to be decorated I use the recipe at the folowing link so I can adjust the consistency of the frosting. It’s SO EASY to make and tastes really yummy!! Congratulations!

Q: Why did my wedding planner resign?
My bride to be and I were a little particular I realize but isnt this his job to put up with that sort of thing and make our day perfect? We didn’t even get that far into the planning stages, all we told him were the colors my bride wanted (some combination of champagne, peach, and powder blue) and we wanted unscented invitations (most of my family is allergic to perfumes!) and a white wedding cake with white frosted and a chicken mcnugget center, plus some other little things like location for the ceremony and reception and such, and we were already going to use the preist who married both of our parents. Do wedding planners normally throw hissy fits and freak out for no reason?

A: did he just resign or throw a hissy fit and freak out?

If he just resigned, it’s possible he realized he over booked and didn’t have enough time or whatever.. if he hissy fitted and freaked out, I think there is probably more to the story than you are telling, perhaps you and your bride-to-be were giving him conflicting information or kept changing your minds.

Also, a chicken mcnugget center in a wedding cake??? I like chicken mcnuggets, but yuck…

Q: Wedding Cake Assistance?
Need cake for 60 people, diabetic, recipes for chocolate cake, white frosting. also colors are navy blue and ivory, so ideas on decor tips, or navy blue flowers, would be helpful.

A: Well I’m not sure about a diabetic recipe. Are you going to be making the cake yourself? . . .I would say if your colors are navy and ivory, the whole thing could be an ivory color, with ivory flowers, and small navy accents. For example, you could use navy ribbons on the cake, or something like that. There aren’t too many flowers which actually come in navy, so if you want it to match up to your actual bouqet, you could do that. . . .Or perhaps you could use a standard Swiss Dot pattern, but with a navy blue? Best of luck to you!

Q: Have you ever had white chocolate wedding cake?
Today I have to tell the lady making our cake what flavor we want… And We have a few we want and can’t really decide yet… I was wondering if anyone has ever had white chocolate cake and if it tasted as good as it sounds. Not the frosting or filling being white chocolate flavor but the cake itself. We were only able to taste 3 of the cakes and we didn’t get to taste that one.. Here are the other options just in case you are curious
Chocolate cake w/ white chocolate mousse filling
Chocolate cake w/ chocolate buttercream filling
Yellow cake w./ chocolate buttercream
chocolate cake w/ vanilla buttercream

Yes I know chocolate buttercream filling is in there a lot it tasted really yummy!
Just so everyone knows, I’m giving thumbs up for all the answers, looks like another bored person with too much time on their hands is giving everyone thumbs down…
Well these are the other options
Cake Flavors
Pound cake
white almond sour cream
yellow
chocolate
dark chocolate
strawberry
coconut
pineapple
lemon
carrot
spice
white chocolate
We wanted to stay away from the fruit flavored ones because most of them we didn’t think sounded good and we didn’t think many guests would eat them

The fillings were
chocolate mousse
chocolate buttercream
mocha
espresso
caramek
amaretto
hazelnut
vanilla mousse
vanilla buttercream
banana cream
white chocolate mousse
raspberry mousse
key lime curd
lemon curd
coconut
strawberry cream
raspberry cream
pina colada
khalua
baileys

Again with the fruit, he wasn’t too crazy about most of them and I do not like the coffee flavored ones.
I’m turning into one of those people that bugs me, all kinds of additional information to read hahaha..BUT I was just thinking since I wrote the flavors and fillings for you guys, chocolate cake with caramel filling sounds kinda yummy. We are going to have to have like 7 tiers just to get all the flavor combos we like haha
B2B 8/30/08… we are also going to set up a desert table…with like 4 different types of cookies, brownies, pies, pudding, jello, and fruit platters. So there is going to be enough of a variety so that everyone should be able to find something.

A: So question for you, during the tasting which cakes/frostings/fillings did you try?
You want to offer at the very least 2 types of cake flavours for your guests, and tailor that number depending on whether you have other desserts. Which you do. You have a lot of other desserts. Do you know what kinds of pies and cookies and brownies etc you’re serving? Because then you can maybe ‘cross out’ those flavours for cake possibilities. At the very minimum, 3 ’safe’ flavours are white, chocolate, and lemon, or some kind of fruit, From there, you know you can get creative. EAch tier is anywhere from 3-4 layers, which means you can get more possibilities in if you keep the cake itself ‘fairly’ neutral’ (e,g, within the chocolate family) and then have 2 or 3 different fillings for that one tier, that would coordinate with the chocolate (like raspberry or strawberry, chocolate ganache, and coffee liqueur-just as examples). Then do something different with your second tier. Say a white cake of some kind, e.g. the WASC (white almond sour cream) with a variety of fillings, mango, lemon, pineapple, etc.
I have a white chocolate cake recipe that I’ve played around with that has white chocolate in the cake, as well as in the buttercream and in the filling. Because there is no actual cocoa solidsin white chocolate, basically sugar, lol, it’s VERY sweet, and if you can say contrast the white chocolate cake with a light frosting, that is less sweet, like whipped cream (if heat won’t be an issue in your venue), so that people can taste the subtle smoothness of the white chocolate in the cake, and not have it overpowered by more chocolate in the frosting, or some other strong frosting flavour. I found that works best when I’m pairing up cakes/frostings/fillings flavours. White chocolate is sweet but delicate.

Like I said, you have plenty more flavour options if you make your 3 tiers more neutral flavours (not flavourless or plain, but just not a distinct flavour that will limit what fillings and frostings you can pair up with) and then you can use 2 or 3 complimenting filling flavours for each tier, plus the frosting. So I guess doing the math, lol, that means what, like 6-10 flavour options for one three tiered cake, instead of 1-3/

Good luck and congrats
